Tarragon crepes

Ingredients
- 6 tbsp de Sunflower oil Gustadina
- 1 cup de Chopped Garlic
- 1 unit de Onion sliced
- 400 grams de Hearts of Palm
- 2 tbsp de Milk cream
- 1/2 cup de Chopped Tarragon
- 1/2 cup de Wheat flour
- 9 units de Egg (6 yolks and 3 whole)
- 3/4 cup de Milk
- 6 tbsp de Melted Butter
- 1 pinch de Nutmeg
- 1 pinch de Black pepper
- 1/2 cup de Mozzarella chesse
- 2 tbsp de Rum
- 1 pinch de Salt
Preparation
Crepe
- Blend all ingredients except butter.
- While still liquefying, add the melted butter little by little.
- Fry the mixture in a pan with little oil.
Filling
- Fry the leek and garlic in a pan.
- Add chopped palm hearts and tarragon.
White sauce
- Cook the flour in butter, without browning it.
- Add cold milk and stir constantly.
- Add the cream, the grated cheese, nutmeg, salt and pepper.
- Mix the filling with the white sauce. Fill the crepes with the mixture.
