Vegetarian quiche of spinach and artichokes

Ingredients
- 2 tbsp de Olive oil
- 1 cup de Chopped Garlic
- 1 cup de Mr. Cook chopped artichokes picadas
- 1/2 de Onion
- 2 cup de Chopped Spinach
- 2 cup de Fontina cheese
- 8 unit de Wheat tortilla
Preparation
- Sauté the onion and garlic in olive oil.
- Add the spinach and artichoke and continue sautéing until the spinach is soft.
- In a separate pan, heat an omelette in the olive oil.
- Place part of the spinach-artichoke and cheese mixture and top with another tortilla.
- Press with a spatula the quesadilla to seal and for the cheese to melt. Turn to toast on the other side.
- Serve immediately.
